My Frugal Valentine’s Day Date Night With Bertolli Meal Soup


I just came in from New York around midnight last night. As you can tell I failed to post my weekly Menu Plan post yesterday. I wanted to do it, I thought of it, but alas it was not meant to be. My husband is not a big Valentine’s Day kind of guy (is there any guy who really is?). I get the whole “we should show love every day, not just Valentine’s Day blah blah blah…” I’m cheesy. I like the dinner, dessert, flowers, dressing up, being alone (or maybe I just want to be alone ;) ).


So when I woke up and remembered it was Valentine’s Day I knew I still had to make a special dinner for us in spite of it being the middle of the week, no babysitter, no groceries and I was EXHAUSTED after my trip! Bertolli challenged me to make my weeknight dinner special, the catch is, I only had ONE HOUR and it’s Valentine’s Day!

  • Bertolli Meal Soup


  • English Muffin
  • Instant Caramel Flan
  • Shredded Parmesan Cheese
  • Garlic
  • Cheddar Cheese
I love a challenge, especially a frugal one, so off I went! It’s one thing to make a quick dinner, but to make it extra special, with dessert and dressing up is another story!

The easiest part was the main course. Bertolli Meal Soups are found in the frozen aisle of your grocery store, so it’s easy to keep on hand for days just like this, when you find yourself  short on time and energy. They come in a variety of hearty flavors from Chicken Minestrone to Tomoatoe Florentine. I had Tortellini with Chicken in my freezer ready to go.
Since the flan takes about 40 minutes to set I got to work on that first.

Caramel in cups.


Heat milk and mix just until simmering. Pour in cups and refrigerate.

Since I hadn’t been to the grocery store, all I found were some English Muffins…not very dinner-like…unless I add some garlic and cheese and make it garlic cheese toast! Yum!
English Muffin Garlic Cheese Toast:

  • Enligsh Muffins
  • Any cheese
  • Garlic mashed (to taste)
  • 1 T butter, softened
  1. Preheat broiler.
  2. Mix butter and garlic together, spread on muffin halves.
  3. Put cheese on top and place in oven.
  4. Broil 3-5 minutes, just until cheese is melted.


Time to start the main course!



I took the soup straight from the freezer into the pan.


I chopped up some fresh garlic. I like adding fresh produce to pre-made food, it helps to give it a kick.


You have to add 1 cup of water and let it heat through. I added the fresh garlic, lowered the heat and covered it for an additional 5 minutes to make sure the veggies were soft and cooked through.



I put it in a festive red bowl, added some shredded parmesan and a little parsley.


My hubby was so touched that after my long trip home I still was able to make a romantic meal for the two of us. He’s a total foodie and was surprised at how good the frozen Bertolli Meal Soup was. The only thing I would change about Bertolli Meal Soup is the quantity. It seemed a little small for a 2 person meal, or maybe it was just so yummy we wanted more?!

My top three tips for having a frugal special weeknight meal:

  1. Put out a fancy tablecloth. I actually like to use cool scarves I find in discount stores. Once you take out the word tablecloth it becomes much cheaper!
  2. Keep instant dessert mixes on hand for quick preparation.
  3. Sit at the table, not in front of the TV!

Since dinner was ready, it was time to get dressed up!

    We went to the Olive Garden to day for lunch with our 4 year old and had a great time. Then we stopped by the Redbox and got two movies – Treasure Buddies for her and Courageous for us.
