Five Ingredient Slow Cooker Roast Chicken

I wanted to go big on Day 1 of my 30 days of Slow Cooker.
 
I think I did it.
 
My better half (hubby) was not convinced about using the slow cooker everyday. He loves roast chicken, it’s one of his favorite dishes. I thought if I could make a juicy, finger lickin’ good roast chicken in the slow cooker, it might help to convince him.
 
He bought me a second slow cooker soon after we finished dinner. I took that as the highest compliment.
 
I have a 6 quart Hamilton Beach that is my go-to. I wanted a 4 quart one also for layered dishes, like lasagna or smaller portions like meatballs. I found this 4 quart one on Amazon for more than 50% off! It’s usually $50, right now it’s on sale for $22.
 
The chicken is dripping with juice and you only need five ingredients: including the chicken!
 
The leftovers made four chicken sandwiches the next day.
 
You can make a whole roast chicken in the slow cooker!

A whole chicken. Salt. Pepper. Paprika. Chicken broth (not pictured). No stuffing, no puffing nothing!

Mix the spices together before rubbing all over the chicken.

It fits! All I added to this was one cup of chicken broth. I didn’t tie the legs. If I were taking this somewhere to a potluck or party I might for presentation sake, but we’re diving right in as soon as 7 hours is up!

Here’s the kicker.
 
I made mashed potatoes for a side dish. (Not in the slow cooker) The gravy is made from all the chicken broth goodness at the bottom of the slow cooker. You can see the specks of paprika from the chicken sprinkled in. Don’t worry, recipe below. I could eat this for breakfast.
 
Wait, I did eat this for breakfast.
 
I hope the rest of my thirty days of slow cooking is as good as this one!

Five Ingredient Slow Cooker Roast Chicken

Ingredients

  • 3 lb. whole chicken
  • 1 tablespoon paprika
  • salt, pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup flour (for gravy)
  • 1/2 cup water (for gravy)

Instructions

  1. Mix spices together and rub generously all over chicken.
  2. Place in slow cooker.
  3. Add chicken broth and cover.
  4. Let cook on low 6-7 hours.
  5. Remove chicken
  6. Measure 2 cups of broth (skim fat) and pour in saucepan and heat to boiling.
  7. Whisk flour and water together until well blended.
  8. Add to gravy and continue stirring until thick. Add salt pepper if you want.

  1. I never thought to do that with a whole chicken, but it does look as if I have the same size you do. I also have a smaller one somewhere…..

    If it weren't for the fact I'd generate too many leftovers, I would LOVE to use my slow cooker 30 days in a row. I am CRAZY about it. Used mine yesterday for pulled pork. :)

    • Hi Liz! We have leftovers every time, I know it scared me at first! I'm using them for lunch the next day and putting it in the kid's lunches, so that might be another option.

  2. This is awesome – definitely trying it. I haven't been using my slow cooker enough lately – and I have a great Hamilton Beach one with nesting 2qt, 4qt, and 6qt crocks. No excuses!

  3. Oh my, I didn't think a slow cooker "roasted" chicken would be so good. I think I will have to try this out. I have 2 slow cookers and I go through my phases when it comes to using them. I need to dust those bad boys off! Looking forward to seeing what else you make. 30 days is a long stretch!

    • Hi Shelly! We don't eat the skin, so if you want it crispy, after cooking I would recommend putting it under the broiler for 3-5 minutes just to crisp the outside. So far, it's not as hard as I thought, probably because I already planned out the meals..but we'll see, it's only day 5! :)

  7. Love this, I’m going to try it. We use our crockpot several times a week. Actually, I have 5 crockpots because we use it so often that we need different sizes! I need to catch up on the rest of your crockpot posts.

    • Wow 5! I have 3, yes we love the crock pot! You should try the mashed potato crock pot recipe I posted, on my sidebar, it’s a great side dish with the chicken. :)
