
In my daughter’s preschool they have fruit of the day. Today was peach!
What a fun way to celebrate fruits and vegetables. This is a great healthy lunch or snack idea to by making a whole theme out of one fruit or veggie. This is the peach themed bento box I came up with:
- Mini peach pancakes
- Peach syrup
- Fresh peaches and blueberries
- Oatmeal and peach puree bar

Since the beginning of this year I’ve gone Bento and haven’t looked back! I love being creative and the kids are really enjoying the variety of foods. To me a Bento is a love note in their lunchbox everyday.
I headed to Walmart without a clue as to what I would make for the peach theme Bento. I went with an open mind…and the answer was staring back at me as soon I as I parked.

In the Walmart parking lot this truck was right next to me and I had to agree, breakfast does get you going. The first aisle I passed was all breakfast items. I think we know where this is going! I decided to make peach pancakes.
So easy, and so yummy!

I used a pre-made pancake mix, and after pouring a tablespoon size in the pan, I gently pushed three little diced peaches from DelMonte Diced Peach Fruit Cups.
I reserved the syrup from the fruit cup to use it to make semi-homemade peach syrup. I added 1 tablespoon cornstarch and 1-2 tablespoons maple syrup. Bring the whole thing to a boil and then pour and let cool. Voila! Peach syrup!

Reuse!
I reused the DelMonte diced peaches container to hold the syrup for dipping. But, since it didn’t have a cover, this is better used for bentos at home!

This is so easy, I’m *almost* embarrassed to write out a whole recipe for it. I used an instant oatmeal cookie pouch, pureed DelMonte diced peaches and spread it all around! This would taste good with diced pears too!
Ingredients
- 1 packed Oatmeal cookie pouch
- 1 package Cinnamon DelMonte Diced Peaches
Instructions
- Preheat oven 350 degrees.
- Make oatmeal cookies according to drections.
- Drain peaches and puree in blender or with immersion blender.
- Spray cooking oil in 9x13 baking dish and spread 3/4 cookie dough in 9x13 baking dish.
- Spread puree over, don't go too close to the edge.
- Drop spoonfuls of the rest of cookie dough over and bake in oven for 30-40 minutes, or until set.
