Slow Cooker Sweet ‘n Spicy Chicken

If you like chicken, pineapple and need an easy recipe, stop. Just stop.
 
The hardest part of this recipe, if I had to pick one, is thickening the sauce at the end. That’s if you’re twisting my arm. I got so happy with my last dump and dash recipe I had to try another one.
 
Chicken breast in slow cookers gets a bad rap. It’s  hard to get juicy chicken breast cooking it on low for hours. It drains whatever little juice and fat there is. With this recipe the chicken is moist and has the sweet ‘n spicy sauce to give it much needed fat.
 
Boneless, skinless chicken breast often goes on sale for as low as $1.99/lb. Add in a can of pineapple and this could be one budget friendly family meal!

This is *almost* all you need, except for a little water and brown sugar that I added. I’m not sure if I even needed the brown sugar but I think it helped to carmelize the sauce a bit. And anything carmelized is a good thing, right?

See, dump and dash! This is where I felt it needed more liquid because I knew there wouldn’t be enough from the chicken alone.

Have you ever made chicken with pineapple? This would work great with chicken thighs too! Use whatever is on sale.
 

Slow Cooker Sweet ‘n Spicy Chicken

Ingredients

  • 1 lb. Chicken boneless skinless chicken breast
  • 1 20 oz. Can of Pineapple Chunks
  • 1/4 cup of Soy Sauce
  • 1/2 cup of reserved Pineapple Juice from can
  • 1 tsp. Red Pepper Flakes
  • 1/2 tsp. Ginger powder
  • 1-2 TSB. Brown Sugar
  • 1 TSB cornstarch to thicken sauce at end

Instructions

  1. Add all ingredients in slow cooker, except cornstarch. Mix together. Cook on low for 4 hours.
  2. When chicken is done, move to plate with slotted spoon. Pour remaining liquid and sauce in small saucepan.
  3. Mix cornstarch with 1 TSB. water until dissolved and whisk with sauce to thicken. Bring to boil, lower and continue stirring until thick. Pour over chicken. Serve with brown rice.

  5. YUMMY – I will definitely be trying this one really soon! Husband loves pineapple and there is not a lot of fat. WIll make my brown rice (which I am trying to eat more of) taste great!

  6. I just stumbled on this recipe while searching your site for crock-pot ideas. I don’t know how I missed it when you first posted! How is the spiciness of this? I tried a very similar recipe but it called for Hawaiian barbeque sauce instead of soy sauce and it was way too spicy for us.

    • Hi Megan, this recipe is not spicy at all! There is no heat, a little kick and it is more sweet then spice! :)

How much water did you add when you dumped everything in? I know you mentioned under the picture that you felt it needed more. I just don’t want to add too much…i’ve de-flavored many dishes by doing that :/
