Quinoa, chia seeds, kabocha; it’s all lovely. There is something to be said though for getting the basics down.
One of my all time favorite comfort foods is mashed potatoes. Creamy, rich and a hint of garlic all makes for a perfect bite. It’s a recipe made for the crock pot.
Save your stove for the rest of dinner, or breakfast, no judgment! And use your slow cooker to make these easy creamy garlic mashed potatoes. Did I mention they were creamy? Good!
And if you have leftovers, make these potato pancakes!
Be forewarned this recipe makes a very large portion! Unless you are making it for a big group, make sure to keep a mashed potato leftover recipe on hand. I like using the leftovers for shephard’s pie or potato pancakes the next day.
I recommend using at least a 6 quart or larger crock pot, it will fill up! For this recipe I used a Hamilton Beach 6 quart slow cooker.
Ingredients
- 5 lbs. Russet Potatoes
- 1/4 cup of butter, cut into cubes
- 1 1/2 cups of chicken stock
- 1-2 garlic cloves, minced
- 1/4 cup cream cheese
- 1/3 cup of milk
- 1 1/4 cup of sour cream
- salt, pepper
Instructions
- Peel and chop potatoes. Place in slow cooker with butter and chicken stock. Set crock pot on high.
- Cook on high for 4 hours.
- Add garlic and cover for 30 more minutes.
- Mash potatoes and add cream cheese, sour cream, milk, salt and pepper to taste.

I love making mashed potatoes in the crock pot! I use the red-skinned potatoes, don’t peel them & put whole cloves of garlic in. Everything mashes up so nicely. Mmmmm, makes me glad we’re serving these on Tuesday!

I never thought of cooking mashed potatoes in my crock pot, I’m going to try this recipe with a little substitution, I’ll use mayo in the place of the creamed cheese.

We are going to give this crock pot recipe a try, but using Yukon Gold Potatoes instead & 4-5 cloves of garlic !
